*Position Overview*
Keystone is seeking a highly organized and experienced Executive Sous Chef to oversee day-to-day kitchen operations.
This leadership role requires a chef who thrives in a collaborative setting and understands the operational discipline required to execute consistent, high-quality service. The Executive Sous Chef will report directly to the Owner and work closely with the Chef of Braai House to ensure smooth coordination of space, equipment, and workflow.
This position requires availability for *evening and weekend service*, including peak theatre and seasonal periods.
The ideal candidate is calm under pressure, systems-driven, and capable of leading a team while maintaining strong professional communication. The candidate will report directly to the owner.
*Key Responsibilities: Kitchen Leadership & Execution*
* Lead daily kitchen operations and service
* Supervise, train, and mentor kitchen staff
* Maintain consistency in food quality, presentation, and timing
* collaborate on menu development
* Assist with menu refinement and feature development
* Maintain labour cost targets.
* Ensure efficient prep systems to support high-volume service periods
*Food Cost & Inventory Management*
* Monitor portion control and minimize waste
* Assist with ordering and inventory tracking
* Maintain proper storage, labeling, and rotation practices (FIFO)
* Support food cost targets through disciplined prep and execution
*Health, Safety & Standards*
* Enforce sanitation and food safety protocols
* Maintain a clean, organized kitchen environment
* Ensure compliance with local health regulations
* Lead by example in professionalism and accountability
*Qualifications*
* 3?5 years experience in a professional kitchen
* Previous leadership experience (Sous Chef or senior line position)
* Experience in fast-paced or high-volume environments
* Strong communication and organizational skills
* Ability to work collaboratively in a shared kitchen model
* Availability for evenings and weekends
* Food Handler Certification required
